Carlsbad Village · Modern Mexican · Wood-Fire Kitchen
Fire-kissed flavors. Carlsbad nights.
Chef Marco Reyes grew up watching his grandmother cook over open flame in Oaxaca. He brought those memories — and those techniques — to Carlsbad. Every dish is built around fire. Come for dinner. Stay for the mezcal.
Chef Marco Reyes grew up watching his grandmother cook over open flame in the mountains of Oaxaca. She never used a recipe. She used memory, instinct, and smoke.
He spent fifteen years cooking in kitchens across Mexico City and Los Angeles before coming to Carlsbad in 2018 to open Casa Fuego. Not as a concept. Not as a brand. But as the restaurant he'd been imagining his whole life.
Everything on the menu begins with fire. The wood-burning grill. The charred salsa. The slow-braised birria that simmers for twelve hours. This is Mexican food that respects where it came from — and takes it somewhere new.
"My grandmother never measured anything. She cooked by smell, by sound, by feel. I'm still trying to cook like her." — Chef Marco Reyes
"We don't use shortcuts. Every tortilla is made by hand. Every salsa starts with fire-roasted chiles. You can taste the difference — and that's the whole point."
Tuesday through Friday · 4 to 6 in the evening
No reservations needed for happy hour. First come, first seated. Bar seating always available.
Casa Fuego's private dining room holds up to 30 guests and is available for birthdays, rehearsal dinners, corporate events, anniversaries, and any occasion that deserves a real meal.
We don't do package deals or fixed menus unless you want them. Tell us who's coming, what matters to you, and we'll build the evening around that. Chef Marco has a way of making every event feel personal — because it is.
"The birria tacos alone are worth the drive from anywhere in San Diego. We came for my birthday and they brought out a little candle on the tres leches without being asked. The mezcal list is serious, the service is warm without being over-attentive, and the space feels genuinely special. We've been back four times since."
"Perfect date night. Dark, warm, romantic without being stuffy. The carne asada was the best we've had in California — and we've been looking for a while. Our server knew the menu cold and suggested the mole negro when we couldn't decide. She was right. We'll be regulars."
"Booked the private room for a client dinner — 12 people, mixed dietary needs, one very particular person about wine. The team handled everything perfectly. Custom menu was excellent, Chef Marco came out to introduce himself, and everyone left genuinely impressed. Booked it again for next quarter already."
